Clean and healthy

So, what happened to blogging once per week? Well, almost immediately after that post I started on a new eating plan. I was diagnosed as hypothyroid a few years ago and have been on medication since. I know it isn’t the biggest deal, but I would rather not be on medication for the rest of my life. I have been doing a lot of reading over the past year on hypothyroidism and a lot of the literature recommends changes in diet to help control thyroid levels. I have dabbled in changes, but have not fully committed to anything. After reading The Fast Metabolism diet, which reiterated much of what I had already read, I committed to 28 days of a specific eating plan that eliminated meat with nitrates and nitrites, “dirty” fish, only certain fruits and vegetables, processed foods, corn, sugar and sugar substitutes, wheat, and dairy. Sugar Free Fed Up Challenge- Day 10

So, here it is. The last day of the sugar-free challenge. Honestly, I think Brian and I both accidentally had sugar once or twice. Did you know that plain Triscuits do not contain added sugar but the sea salt and black pepper version has added sugar? Yep, guilty of eating added sugar there. How do I feel? Not any different. I eat a low added sugar diet on a regular basis and gave up fake sugars long ago. So, I’m probably not a good person to speak on the subject. I think I actually ate worse while doing the Fed Up Challenge than I normally do. Why? Because I ate a TON of cheese. Almost all condiments and seasonings have added sugar, unless you make them from scratch. Whirlwind few weeks

Wow. It’s been a great few weeks. I was in baking mode when we had a birthday at work and I made a peach pie with a new crust recipe that involved vodka. The vodka evaporates out, leaving the crust nice and flaky. It’s definitely a keeper of a recipe. I also made a giant cookie cake. Over Memorial Day weekend, Brian and I traveled to Florida for his family’s annual reunion. We had a great time with his family and it was very well-organized.   While we were there we also hit up a giant flea market. I bought my brother an unopened pack of baseball cards from 1990 and we saw this guy doing karaoke. I was back in Chicago for one day, which Brian and I used to watch the new movie Fed Up. Eggcellent weekend

See what I did there? I made an Easter joke. Ha. This weekend was exactly what I needed. Lots to time outside in the beautiful temperatures. It was the exact weather that you hear Chicagoans talk about all year. The weather that is reason we live here and endure the winters. It was perfect. Friday night, Brian and I met for dinner at Dawali Mediterranean Kitchen. I had been there on my last girl’s night and knew he would love it. He did. After eating a lot of hummus, we were both pretty full and didn’t even put a dent in our dinners. The good news was that we then had lunch for Saturday. The only problem was that we didn’t have any more hummus. I did have an eggplant on hand, so I roasted it and made some baba ghanoush to supplement our left overs. It is delicious and

I never know what to title these update posts. After being out-of-town last weekend, I felt like I needed to have a very productive weekend this past weekend. And productive, it was! The fridge is packed to the brim. Then I realized that I have a girls dinner on Wednesday, Brian’s birthday Thursday and Brian’s birthday dinner with friends on Saturday! Well, I guess more meals will be going into the freezer! Oh, well. I spent most of Saturday morning at the grocery store and prepping food. I made rama chicken bowls(brown rice, potato, broccoli and chicken with a peanut sauce), fajita bowls, and prepped fruits and veggies for the week. I got a steal on some chicken breasts, so I bought in bulk, individually packaged and froze most of them. I love a good deal. Mangos were $0.49/each, so I bought a few, sliced and froze in an even

Lightened up biscuits and gravy

It took me years to even try biscuits and gravy. I openly proclaimed my long standing disgust for them without ever remembering really trying them. I’m not sure if I made it up in my mind that they were horrible or if I did actually they them and not like them at some point in my life. Fast forward to the past few years. Brian and I love to go out to brunch. He will occasionally order biscuits and gravy. During one of those times over the past few years, my curiosity got the best of me and I tried a bite of his order. I surprised myself by really liking them. So, I wanted to figure out how to make a healthier version and I chose this recipe to healthify. Weekend wrap up

It was kind of a weird weekend in terms of food. Usually I spend a lot of time in the kitchen on the weekends making food for the week, but that was not the case. I have been trying to clean up my eating little by little. I’ve upped my exercise over the past few weeks and with that, my hunger levels have soared. I’ve been focusing on getting in more protein and inadvertently have lowered my intake of carbs. My focus when we went grocery shopping on Saturday was protein, fruit and veggies. We left with a lot of chicken(it was on a really good sale), some beef, and lots of fruit and vegetables. So what was on the menu this weekend? Friday night was pizza night. Weekend review

It was a very simple weekend in regards to meals. Nothing crazy or time intensive. We got more snow on Saturday. I made easy banana pancakes for a protein packed breakfast before I headed out to run errands and go to the gym. They were the perfect thing to keep me full and energized. We had a simple supper of tacos. All of the delicious topping are under the meat, so you can’t see them. Sunday morning I made myself a deconstructed breakfast taco. I made cinnamon roll waffles for Brian. I revived the leftovers from a stir fry that was a flop into a peanut sauce with soba noodles that was really good.

Pizza fest weekend update

On Friday night, we went over to Dana and Tyler’s place for some homemade pizza. Tyler makes some delicious pizza. He made an appetizer of cheese pizza that we nibbled on while the spinach, mushroom, and garlic and the pepperoni pizza’s cooked. Dana made a really tasty salad that I couldn’t resist having two helpings of. Tyler made some of the best homemade pizza I have ever eaten. So delicious. I think I ate double the amount of pizza I usually do it one sitting. I think part of his pizza making skills come from the authentic pizza making outfit: Look at one of his beauties: After we started to come out of our food coma, we played a really fun game called Wits and Wagers(?). Last weekend-ish

Why the -ish? It also included a very productive Tuesday. I had my final wedding dress fitting Saturday morning. We had a a BBQ chicken and pineapple wrap for lunch. I got up early on Sunday morning and cleaned out my garden plot. The end of season garden is such a sad looking thing. The pulling of plants was fueled by a lot of hot coffee. When I got home from the garden, I picked 55 pears off the tree in our back yard. Then I made myself a large, hot breakfast and more coffee. Ham, egg and cheese on an everything bagel thin with lots of fresh fruit. After that, I got to work using some pears by making cranberry pear bread. I already talked about staying home sick from work on Tuesday. I used it to my advantage by doing meal planning for the rest of the week and
