Old favorites, new favorites

I have really enjoyed being back in the kitchen more since the start of the new year. When we travel a lot, we do as I think most people do, shop for convenience and speed. I hadn’t been making nearly as many things from scratch. I’ve really enjoyed having homemade nut milks among other things on hand. One of my favorite things to make with homemade milk is chia pudding. It makes a delicious and filling breakfast. Another thing I’ve done to help myself have more time in the kitchen is on occasion I get some of my groceries delivered. I still buy almost all of my staples at Aldi, but this really helps me to cut down on running to 3 different grocery stores, which can take up most of 1 weekend day, when you don’t have a car. Copycat Chick-Fil-A chicken-paleo friendly

Get the great taste of Chick-Fil-A without the (IMO)bad politics or bad ingredients. Yes, it’s true. This chicken is moist, flavorful and delicious. According to thedomesticman.com, this is the list of ingredients in Chik-Fil-A chicken(I did not verify). “100% natural whole breast filet, seasoning (salt, monosodium glutamate, sugar, spices, paprika), seasoned coater (enriched bleached flour [bleached wheat flour, malted barley flour, niacin, iron, thiamine mononitrate, riboflavin, folic acid], sugar, salt, monosodium glutamate, nonfat milk, leavening [baking soda, sodium aluminum phosphate, monocalcium phosphate], spice, soybean oil, color [paprika]), milk wash (water, egg, nonfat milk), peanut oil (fully refined peanut oil with TBHQ and citric acid added to preserve freshness and Dimethylpolysiloxane an anti-foaming agent added).” I heavily adapted this recipe last weekend and plan on making some more this weekend. Weekly meal planning and prep

The most common question that I am asked is how to meal plan and prep. I dedicate a fair amount of time to it. It’s not always easy or fun, but it is very beneficial. Planning meals ahead of time helps you save money by buying what you need at the grocery store, less impulsive purchases and eating out less. It also helps you to be healthier, eat fewer calories, waste less food and is a huge time saver(in the long run). I usually spend about 4 hours per weekend making meals for the week. While many of you will say that you don’t have that amount of time, you probably do. I multitask while I cook. If I’m roasting sweet potatoes in the oven, I’ll pop in a 30 minute workout video and do that while they roast. Or do laundry and other household tasks while things cook. Most
