Old favorites, new favorites

I have really enjoyed being back in the kitchen more since the start of the new year. When we travel a lot, we do as I think most people do, shop for convenience and speed. I hadn’t been making nearly as many things from scratch. I’ve really enjoyed having homemade nut milks among other things on hand. One of my favorite things to make with homemade milk is chia pudding. It makes a delicious and filling breakfast. Another thing I’ve done to help myself have more time in the kitchen is on occasion I get some of my groceries delivered. I still buy almost all of my staples at Aldi, but this really helps me to cut down on running to 3 different grocery stores, which can take up most of 1 weekend day, when you don’t have a car. Return to healthy eating

I heard on the news yesterday that the average American consumes 4000 calories on Thanksgiving Day. Yikes! As I posted earlier, we made some healthier swaps for our meal to help keep our meal and waistlines I check. We had mashed cauliflower instead of potatoes, turkey breast instead of a whole turkey, a side of Brussels sprouts and only a half batch of stuffing. Oh, and no dessert. Besides eating a little more than normal yesterday, I have been eating more than normal for about the past two weeks due to wedding festivities and being on my honeymoon. On a normal day, I eat more then 5 servings of fruits and vegetables. Well, Iceland doesn’t have the best climate for growing produce, so fruits and vegetables are extremely expensive there and to be honest, the quality isn’t that great. Chipotle apple turkey chili

I emailed myself this recipe not long after making my last batch of chili. The original recipe is apparently from the Rachael Ray magazine. This chili is very slightly sweet with a deep smokey flavor with some spice. It’s a nice change from the standard chili recipe. Ingredients: 2 tablespoons olive oil 2 pounds lean ground turkey 1 can chipotle chiles in adobo sauce salt and pepper 1 tablespoon ground coriander 1 tablespoon ground cumin 1 tablespoon smoked paprika 1 medium onion, diced 2 cloves garlic, minced 1 gala apple, diced 1 stick cinnamon 1 bay leaf 1 cup apple cider 2 cups chicken stock 3 tablespoons tomato paste Heat the olive oil on medium heat in a large dutch oven or soup pan. Cook onion and garlic until onion translucent. Add in turkey meat. Cook until browned, breaking into chunks while cooking. Finely chop 3 peppers and add that
