The thing about moderation…

Going into the new year, I declared Tuesday’s to be treat Tuesday’s. If I want dessert then I can have it on a Tuesday. It really makes me think about what I would want and choose wisely. I had dessert last Tuesday. A delicious chocolate and almond butter tart. Then I was thinking about it yesterday and there was nothing that I wanted. I always forget that when I cut down on sugar, it makes me not really want it anymore. The more I eat sugar, the more I want. So after only one treat Tuesday, I fell off the treat wagon. Not that there won’t be treats, but…they are just so much less appealing now. I love eggs. Love them. I had this little creation the other day and it was a total delight. Spinach, tomato, and feta. Weekend review

It was a very simple weekend in regards to meals. Nothing crazy or time intensive. We got more snow on Saturday. I made easy banana pancakes for a protein packed breakfast before I headed out to run errands and go to the gym. They were the perfect thing to keep me full and energized. We had a simple supper of tacos. All of the delicious topping are under the meat, so you can’t see them. Sunday morning I made myself a deconstructed breakfast taco. I made cinnamon roll waffles for Brian. I revived the leftovers from a stir fry that was a flop into a peanut sauce with soba noodles that was really good.

Pizza fest weekend update

On Friday night, we went over to Dana and Tyler’s place for some homemade pizza. Tyler makes some delicious pizza. He made an appetizer of cheese pizza that we nibbled on while the spinach, mushroom, and garlic and the pepperoni pizza’s cooked. Dana made a really tasty salad that I couldn’t resist having two helpings of. Tyler made some of the best homemade pizza I have ever eaten. So delicious. I think I ate double the amount of pizza I usually do it one sitting. I think part of his pizza making skills come from the authentic pizza making outfit: Look at one of his beauties: After we started to come out of our food coma, we played a really fun game called Wits and Wagers(?). Polar vortex

With today’s extremely cold temperatues, I am fortunate to have a 3 day weekend and not have to go to work today. It’s been a great 3 days. Friday night I made Brian a tuna melt topped with bacon crumbles. I had a veggie wrap that I have been absolutely obsessed with eating lately. It’s lettuce, spinach, tomato, cucumber radish, olives and giardiniera. So flavorul, crunchy and delicious. Saturday, I went snowshoeing at Northery Island with friends. A great work out and a way to enjoy the somewhat mild weather. But before doing that, I needed a hearty breakfast to keep me full. Multigrain pancakes with cinnamon, pecans and banana: Sunday morning I got up and headed out in the never ending snow to go to the grocery store and pick up some things before the temperatures dropped later in the day. The year of the big snow

After ringing in 2014 with friends, we walked home in the snow. We woke up to more snow. It’s still snowing. I started off the new year with a hot breakfast of and egg, spinach and sriracha wrap, banana and coffee. And a decision to make. To run a 5k or head to my warm and cozy gym. For the past 4 years, I have done the New Year’s Day 5k. The weather is always horrible. Every year, I vow to not do it the next year, but I always end up signing up again. It’s a great way to start the year(theoretically). It was very cold(windchill in the single digits) and snowing sideways yesterday at the start of the race. Return to healthy eating

I heard on the news yesterday that the average American consumes 4000 calories on Thanksgiving Day. Yikes! As I posted earlier, we made some healthier swaps for our meal to help keep our meal and waistlines I check. We had mashed cauliflower instead of potatoes, turkey breast instead of a whole turkey, a side of Brussels sprouts and only a half batch of stuffing. Oh, and no dessert. Besides eating a little more than normal yesterday, I have been eating more than normal for about the past two weeks due to wedding festivities and being on my honeymoon. On a normal day, I eat more then 5 servings of fruits and vegetables. Well, Iceland doesn’t have the best climate for growing produce, so fruits and vegetables are extremely expensive there and to be honest, the quality isn’t that great. For example, a side salad at a restaurant was about $18

Monday, back at it

It’s already Monday again? My weekend was so full of fun activities that it feels like I haven’t been to work in a week! Thursday night, I was incredibly happy to eat a very summery meal of a half of a BLT with fruit, veggies and a few chips. See that sweet corn? It was my last ear from a batch I received from Iowa. Possibly the best sweet corn of my life. So sweet and tender it made my heart sing. Friday night we picked up our wedding invitations and envelopes. Eeek! It’s coming so soon. I’m so excited! Brian and I grabbed dinner at Native Foods. He had a curry bowl and I had the indo salad. Both were amazing. We loved our own choices and each other’s so much that we switched bowls half way through.
