Copycat Chick-Fil-A chicken-paleo friendly

Get the great taste of Chick-Fil-A without the (IMO)bad politics or bad ingredients. Yes, it’s true. This chicken is moist, flavorful and delicious. According to thedomesticman.com, this is the list of ingredients in Chik-Fil-A chicken(I did not verify). “100% natural whole breast filet, seasoning (salt, monosodium glutamate, sugar, spices, paprika), seasoned coater (enriched bleached flour [bleached wheat flour, malted barley flour, niacin, iron, thiamine mononitrate, riboflavin, folic acid], sugar, salt, monosodium glutamate, nonfat milk, leavening [baking soda, sodium aluminum phosphate, monocalcium phosphate], spice, soybean oil, color [paprika]), milk wash (water, egg, nonfat milk), peanut oil (fully refined peanut oil with TBHQ and citric acid added to preserve freshness and Dimethylpolysiloxane an anti-foaming agent added).” I heavily adapted this recipe last weekend and plan on making some more this weekend. Clean and healthy

So, what happened to blogging once per week? Well, almost immediately after that post I started on a new eating plan. I was diagnosed as hypothyroid a few years ago and have been on medication since. I know it isn’t the biggest deal, but I would rather not be on medication for the rest of my life. I have been doing a lot of reading over the past year on hypothyroidism and a lot of the literature recommends changes in diet to help control thyroid levels. I have dabbled in changes, but have not fully committed to anything. After reading The Fast Metabolism diet, which reiterated much of what I had already read, I committed to 28 days of a specific eating plan that eliminated meat with nitrates and nitrites, “dirty” fish, only certain fruits and vegetables, processed foods, corn, sugar and sugar substitutes, wheat, and dairy. Sugar Free Fed Up Challenge- Day 10

So, here it is. The last day of the sugar-free challenge. Honestly, I think Brian and I both accidentally had sugar once or twice. Did you know that plain Triscuits do not contain added sugar but the sea salt and black pepper version has added sugar? Yep, guilty of eating added sugar there. How do I feel? Not any different. I eat a low added sugar diet on a regular basis and gave up fake sugars long ago. So, I’m probably not a good person to speak on the subject. I think I actually ate worse while doing the Fed Up Challenge than I normally do. Why? Because I ate a TON of cheese. Almost all condiments and seasonings have added sugar, unless you make them from scratch. The great salad toss up

I’ve needed some new inspiration when it comes to salads. How to you keep eating salads interesting? Mix them up! I was traveling a few month’s ago and stopped at CIBO Express at O’Hare. I love stopping there as they always have a ton of healthy options. There, I got an insanely delicious salad. It was mixed greens topped with roasted sweet potato, blue cheese, pecans, dried cranberries, and turkey with a champagne vinaigrette. It was so flavorful, filling and comforting because it tasted like Thanksgiving. This led me to think about how I could build more creative and filling salads rather just than vegetables or my “go to” taco salad. Here are two that I’ve made lately: I had a sweet potato with cinnamon. Then I had a salad of spinach, tri color peppers, onion, tomato, mushrooms, carrot shreds, sunflower seeds and a combination of blue and cheddar cheese.

Weekend wrap up

It was kind of a weird weekend in terms of food. Usually I spend a lot of time in the kitchen on the weekends making food for the week, but that was not the case. I have been trying to clean up my eating little by little. I’ve upped my exercise over the past few weeks and with that, my hunger levels have soared. I’ve been focusing on getting in more protein and inadvertently have lowered my intake of carbs. My focus when we went grocery shopping on Saturday was protein, fruit and veggies. We left with a lot of chicken(it was on a really good sale), some beef, and lots of fruit and vegetables. So what was on the menu this weekend? Friday night was pizza night. Instead of bringing home slices, I grabbed a take and bake pizza so there would be leftovers for Brian. I pulled the

A week in review

This is going to be a little more than a weekend wrap up. Last Wednesday I had the pleasure of having a wonderful meal cooked for me by my friend’s Brock and John. Brock made the cocktails and collaborated with John on flavor combinations while John did most of the cooking. We started with a mixed greens salad, goat cheese and beets prepared two ways. We moved on to scallops, tomatoes and linguine in a moan-worthy white wine sauce. We ended with a pot de creme with mint, fleur de sel and a raspberry reduction pipped to the bottom. Not only was the food out of this world, we had hours of great conversation and laughter. Nearly finished bourbon cocktail: Pot de creme: Thursday night, Brian wanted tomato soup. Pizza fest weekend update

On Friday night, we went over to Dana and Tyler’s place for some homemade pizza. Tyler makes some delicious pizza. He made an appetizer of cheese pizza that we nibbled on while the spinach, mushroom, and garlic and the pepperoni pizza’s cooked. Dana made a really tasty salad that I couldn’t resist having two helpings of. Tyler made some of the best homemade pizza I have ever eaten. So delicious. I think I ate double the amount of pizza I usually do it one sitting. I think part of his pizza making skills come from the authentic pizza making outfit: Look at one of his beauties: After we started to come out of our food coma, we played a really fun game called Wits and Wagers(?). Productive weekend

Last weekend was one of my most productive weekends in the kitchen in months. As a result, we have been eating well all week. What was I busy making? I started off my Saturday morning with something called bulletproof coffee. Other’s call it buttered coffee. Yes, I put grassfed butter in my coffee. I brewed 2 cups of organic coffee, then put it in the blender with 1 tablespoon coconut oil and 1 tablespoon Kerrygold grassfed butter. Blend on high until frothy and creamy like a latte. It is absolutely delicious. It is a high fat treat, but they are healthy fats. I can’t say I will be doing this everyday, but maybe once a week. I also started sprouting lentils on Saturday. It’s so easy and they are absolutely delicious when sprouted! I can’t wait to eat a big salad with them on it for dinner tonight. With my

Last weekend-ish

Why the -ish? It also included a very productive Tuesday. I had my final wedding dress fitting Saturday morning. We had a a BBQ chicken and pineapple wrap for lunch. I got up early on Sunday morning and cleaned out my garden plot. The end of season garden is such a sad looking thing. The pulling of plants was fueled by a lot of hot coffee. When I got home from the garden, I picked 55 pears off the tree in our back yard. Then I made myself a large, hot breakfast and more coffee. Ham, egg and cheese on an everything bagel thin with lots of fresh fruit. After that, I got to work using some pears by making cranberry pear bread. I already talked about staying home sick from work on Tuesday. I used it to my advantage by doing meal planning for the rest of the week and

How to eat more vegetables: breakfast and lunch

This is not a sponsored post. I ran across a product today that I loved, so I wanted to share it with you. I also wanted to give you some tips and trick to add more vegetables into your daily diet. I love salads. A lot. I don’t use much dressing and sometimes don’t use any at all, but there are some salad combinations that just need it. I was low on salad dressing at work, so I stopped at the grocery store this morning. I spotted this delightful looking bottle of feta dill yogurt dressing.
