I had found a recipe on Pinterest, but made so many changes to it by the time it was done, that it really looked nothing like the original by the time I was done. Ingredients: 1-15oz can of coconut milk(you can use light if you want) 1 1/2 T red curry paste 1/2 T curry powder 1/2 tsp ground ginger 1/2 tsp ground garlic powder 1 cup of pineapple chunks(well-drained, reserve juice to the side) 1 large carrot, cut into match sticks 1 1/2 cups broccoli but into bite-sized florets 2 chicken breasts diced cilantro for garnish, optional lime, optional rice or cauliflower rice to serve over Directions: Prepare the rice or cauli rice as directed, so it will be done when your curry is finished. These are a satisfying but easy throw together lunch or dinner. I spread a little bbq sauce and mayo on a wrap shell. I’m not a huge fan of mayo, but I don’t know what it does when it mixes with the bbq sauce and pineapple in this wrap, but it’s a little magical. Then I added some shredded mozzarella and some sharp cheddar. Layer on some cooked chicken and fresh pineapple. Add lettuce and any other veggies you want. I would suggest tomato and cucumber. Roll it up. Stick a toothpick on each side. Slice down the middle. Serve with healthy sides.
This was one jam-packed weekend full of pure goodness. After work on Friday, I headed straight to Maifest(my favorite summer fest) where Brian and I were able to meet up with several friends from different circles. It was one big fun time filled with German food and beer. I spent some time at the garden on Saturday. We are continuing to get strawberries and kale. Everything else is growing nicely with all the recent rain. This picture makes it look like my garden is full of weeds, but those are just onions growing in the spaces between the other plants.
