Twenty fifteen

Published on January 2, 2015, by in Uncategorized.

Hey everyone! I’ve been in blogging hibernation since June. Last year was a crazy but wonderful year. I did a ton of travelling and was glad to spend time with friends and family all across the country. It was very much a year of enjoyment. So, where does that leave me in 2015? Ready for a little more consistency and moderation. I tend to a be a little too strict and rigid with myself at times. Then other times, it all goes out the window. My goals for 2015 are to work out 3-4 times a week, every week. I’ve gotten much better about doing a variety of workouts and would like to continue that. And when I work out consistently I automatically eat healthier. So, if I am working out, I don’t really need to set any food based goals. I also got a great planner from my Secret Santa at

The hardest season

Published on May 7, 2014, by in Update.

Hello. I usually don’t get very personal on my blog, but today, I am. I am sitting behind my computer with my pants a little tight from all the amazing food I have been eating lately. I completed the 21 Day Fix and had amazing results. I absolutely love the program and can’t stop raving about it to all of my friends. So, what happened? Well, I didn’t completely undo my progress, but I am definitely feeling bloated from the food I have been consuming. This is the hardest season for me. It’s my husband’s birthday, then my birthday, which leads directly into patio weather. And since I live in Chicago, the few warm months must be taken advantage of. I am actually healthiest in the winter. I will go to the gym more days than not, because I don’t want to be outside. Since it the hardest season for

Lately

Published on March 8, 2014, by in Update.

Wow! Where have I been? I can’t believe that it’s almost been three weeks since I last posted. I’ve been obsessed with collard green wraps. I tried one of the thai sweet potato collard green wraps from Whole Foods over a month ago and I can’t stop thinking about them. After buying a few from their pre made foods counter, with some inconsistency in the product that I got, I decided to take it to the kitchen and make them myself. I think I ate them for most meals for a week. So good. I have also been having a love affair with radishes. Plain and on everything. Can’t get enough. I made a big batch of baked apple donuts. They were delicious and were very reminiscent of apple pie. I really liked them. Just sweet enough, but not too sweet. Last week I ran a 10k in some brutal

Weekend wrap up

Published on February 11, 2014, by in Update.

It was kind of a weird weekend in terms of food. Usually I spend a lot of time in the kitchen on the weekends making food for the week, but that was not the case. I have been trying to clean up my eating little by little. I’ve upped my exercise over the past few weeks and with that, my hunger levels have soared. I’ve been focusing on getting in more protein and inadvertently have lowered my intake of carbs. My focus when we went grocery shopping on Saturday was protein, fruit and veggies. We left with a lot of chicken(it was on a really good sale), some beef, and lots of fruit and vegetables. So what was on the menu this weekend? Friday night was pizza night. Instead of bringing home slices, I grabbed a take and bake pizza so there would be leftovers for Brian. I pulled the

Running music

Published on January 22, 2014, by in Update.

I posted that I had updated my running music recently and got several requests for what made my list. What qualifies as good running music? In my opinion, it needs to be a little fun and have a fast beat. I usually aim for 140bpm or more. I am not a fan of angry music. The list still needs a little tweaking and some more added to it, especially now that my runs are starting to get longer. I usually listen to it on shuffle, so I don’t get in a rut. Anyone have any song suggestions?

Pizza fest weekend update

Published on January 22, 2014, by in Recipes, Update.

On Friday night, we went over to Dana and Tyler’s place for some homemade pizza. Tyler makes some delicious pizza. He made an appetizer of cheese pizza that we nibbled on while the spinach, mushroom, and garlic and the pepperoni pizza’s cooked. Dana made a really tasty salad that I couldn’t resist having two helpings of. Tyler made some of the best homemade pizza I have ever eaten. So delicious. I think I ate double the amount of pizza I usually do it one sitting. I think part of his pizza making skills come from the authentic pizza making outfit: Look at one of his beauties: After we started to come out of our food coma, we played a really fun game called Wits and Wagers(?). I think it would be a great family game for the holidays. Saturday, I encouraged Brian to trek out in the snow with me

Productive weekend

Published on January 15, 2014, by in Recipes.

Last weekend was one of my most productive weekends in the kitchen in months. As a result, we have been eating well all week. What was I busy making? I started off my Saturday morning with something called bulletproof coffee. Other’s call it buttered coffee. Yes, I put grassfed butter in my coffee. I brewed 2 cups of organic coffee, then put it in the blender with 1 tablespoon coconut oil and 1 tablespoon Kerrygold grassfed butter. Blend on high until frothy and creamy like a latte. It is absolutely delicious. It is a high fat treat, but they are healthy fats. I can’t say I will be doing this everyday, but maybe once a week. I also started sprouting lentils on Saturday. It’s so easy and they are absolutely delicious when sprouted! I can’t wait to eat a big salad with them on it for dinner tonight. With my

New Year’s Resolutions 2014

Published on December 31, 2013, by in Update.

When looking at how I want to become a better person and improve my life in 2014, I looked back at the past two years. In 2012, I made a lot of dietary changes. In 2013, I was going to cut back on the sugar in my diet and mix up my workout routine. I’ve actually done a fair job of sticking to many of the dietary changes from 2012 and can’t believe that I cut fake sweeteners out of my life 2 years ago! Last year’s goal of cutting back on sugar had its ups and downs. Once I get away from sugar for a few days, I don’t do so bad. But when I do have it, I want more and more. As for working out, I did diversify my work outs a bit. I have started to retrain myself in running, spent more time on the elliptical,

Walk it off

Published on September 10, 2013, by in Update.

This past winter, I got a great deal on a watch. This was no ordinary watch, but one of those sporty heart rate monitor exercise watches. The only problem with these watches is that the battery doesn’t last nearly as long as a regular watch as they are working so much harder and tracking so much more. So, the battery died about 2 months ago. Last week, Brian was trying to change the battery and accidentally broke the LCD screen on it. He very kindly bought me a new watch, which might actually be an upgrade to my old watch. This one also had a pedometer, calculates the calories you burn throughout the day based on your heart rate and you can set daily goals on it. I really like. It’s also very motivating to move more. I had a lot of errands to run this weekend and by run,

Goodbye, summer

Published on September 3, 2013, by in Recipes.

Friday seems like so long ago that I can hardly remember what we  did.  We had plans to go out to eat, but with some torrential down pours right after I got home from work, we decided to order in. We ordered in some chicken shawarma from a new restaurant. It was so-so. So far, I haven’t found a place that competes with a a restaurant by my work. Then we set up an assembly line and put together our wedding invitations. After that was done, we rewarded ourselves with some couch time and started watching Orange is the New Black. Is everyone else watching this show? You should be! It’s great. Saturday morning, I got up and made a veggie loaded breakfast with homemade tomato sauce, spinach, and eggplant. It was so delicious. Then I headed out for a busy day of going to the post office, hair cut
