The thing about moderation…

Going into the new year, I declared Tuesday’s to be treat Tuesday’s. If I want dessert then I can have it on a Tuesday. It really makes me think about what I would want and choose wisely. I had dessert last Tuesday. A delicious chocolate and almond butter tart. Then I was thinking about it yesterday and there was nothing that I wanted. I always forget that when I cut down on sugar, it makes me not really want it anymore. The more I eat sugar, the more I want. So after only one treat Tuesday, I fell off the treat wagon. Not that there won’t be treats, but…they are just so much less appealing now. I love eggs. Love them. I had this little creation the other day and it was a total delight. Spinach, tomato, and feta. Weekly meal planning and prep

The most common question that I am asked is how to meal plan and prep. I dedicate a fair amount of time to it. It’s not always easy or fun, but it is very beneficial. Planning meals ahead of time helps you save money by buying what you need at the grocery store, less impulsive purchases and eating out less. It also helps you to be healthier, eat fewer calories, waste less food and is a huge time saver(in the long run). I usually spend about 4 hours per weekend making meals for the week. While many of you will say that you don’t have that amount of time, you probably do. I multitask while I cook. If I’m roasting sweet potatoes in the oven, I’ll pop in a 30 minute workout video and do that while they roast. Or do laundry and other household tasks while things cook. Most

Lately

Wow! Where have I been? I can’t believe that it’s almost been three weeks since I last posted. I’ve been obsessed with collard green wraps. I tried one of the thai sweet potato collard green wraps from Whole Foods over a month ago and I can’t stop thinking about them. After buying a few from their pre made foods counter, with some inconsistency in the product that I got, I decided to take it to the kitchen and make them myself. I think I ate them for most meals for a week. So good. I have also been having a love affair with radishes. Plain and on everything. Can’t get enough. I made a big batch of baked apple donuts. They were delicious and were very reminiscent of apple pie. I really liked them. Just sweet enough, but not too sweet. Last week I ran a 10k in some brutal

The early morning

Wow. It’s only 9am on Sunday and I feel like I can already give you the weekend update. It’s amazing how productive a weekend can be when I don’t over schedule myself, go to bed at a decent time and get up at a decent time. Friday night, Brian had plans with a friend to see Pacific Rim, because I refused to go see it. I brought dinner home and relaxed on the couch. It was awesome. I went to early morning yoga yesterday. I hadn’t been in a few months and was so glad I went. My knee has been killing me lately from a combination of running and biking and yoga is the only thing that seems to help. Splurge Saturday

Today started off with a breakfast of banana, almond butter and flax waffles with some 5 minute espresso brownie crumbled on top. With two mugs of coffee. So I had a healthy lunch of yellow squash, spinach, chicken breast and marinara on low calorie yam flour noodles. It looked nice and summery with the green and yellow. See previous post about being cranky due to crappy weather and wanting sunshine. Then there was another afternoon splurge of Dairy Queen. The blizzard of the month is a chocolate covered pretzel with peanut butter blizzard. Could there be a better combination in the world? Especially when you have a buy one get one free coupon? Weekend madness-Saturday

Saturday started off great with a 3 mile walk and breakfast at Orange. I got fresh squeezed grapefruit-orange-carrot-lemon-ginger juice. Brian got watermelon-strawberry-lime juice. Both were tasty, but I liked mine best. We enjoyed an order of frushi(fruit sushi). I got the vegetarian breakfast burrito with a side of mixed greens. Brian got the honey themed pancake flight(honey banana Cheerios, honey quince, honey blueberry and honey rosemary pancakes). On the way home, we stopped at Bed Bath and Beyond and I got a milk frother. I had been wanting one for quite some time. We had to have lattes as soon as we got home. One of the most exciting things of the year happened when our new mixer(also our first wedding present) was delivered this week. Breakfast burrito

I’m not sure that this post is really post-worthy. In fact, I’m sure many of mine are of questionable post-worthiness. But this breakfast was delicious! I am not sure if it was extra delicious because I had just finished a 5 mile run or if it was because it involved eggs. I love eggs. Or avocado. I love avocado. Or hot sauce. I love hot sauce. I made two eggs over medium, topped with a half of an avocado(yes, I know that is a lot of avocado) and hot sauce. I had one brown rice tortilla left. So after the eggs came out of the pan, I threw that in there and let it brown a little on each side and threw a slice of organic white cheddar from grass-fed cows on there.
