HelloFresh: a review

This is not a sponsored post. I’ve been on the hunt for some new meal ideas. I love the idea of a meal delivery service for two. When I find a new recipe I want to make, I am often deterred by the amount of special ingredients I need to buy to make the recipe once. What if I don’t like the recipe and now have three full spice bottles I’ll never use again? Or what will I do with the rest of that random vegetable that I only needed a little of? I decided that I would try a few of the meal delivery services, and why not, they offer great deals for first time customers. The  first company I tried was HelloFresh. Baba Ghanoush

    So. I was lied to. I found a recipe for baba ghanoush called 3 Minute Baba Ghanoush. It took way more than 3 minutes. It was also delicious. Ingredients: 1 roasted eggplant(see below) juice of 1 lemon 1/4 cup tahini 2 cloves garlic 1 teaspoon salt 2 tablespoons EVOO fresh ground pepper, to taste So… to get a roasted eggplant, take a small(1-1.5 pounds) eggplant, prick it with a fork a few times, and bake it for 30-40 minutes at 400F. Pre and post-roasted eggplant: Let the eggplant cool, slice long ways and scoop out the innards. This is the part that definitely took longer than 3 minutes. Place the inner scoopings of eggplant and remainder of ingredients in a powerful blender(I have a Vitamix). Start on low and gradually increase speed. Blend on high for about 30 seconds until your baba is incredibly smooth and creamy. Pour

A few Home Depots runs were made when we moved. I went to get a few things and ended up coming home with four more plants. A cherry tomato, a patio tomato, red bell pepper and an eggplant. Yes, I am now up to 4 different types of tomato plants and Brian doesn’t even eat tomatoes! Here’s the storm brewing overhead as I went out to take pictures: Look at the start of my first little eggplant! My poor basil nearly drowned in the storm the other day. There was over an inch of water sitting on the top of the dirt when I got to it, but it’s still growing. Remember big beef and the windowsill gang? They have grown into quite the jungle but have yet to produce a blossom or fruit. I want some heirloom tomatoes! I have some blossoms on my red pepper plant.  A few

Italian vegetables with tofu

Zucchini and eggplant were on a mega sale at the grocery store the other day and I couldn’t resist stocking up. Then I realized that I was actually going to have to use them, I just didn’t know for what. Eggplant parm is one of my all-time favorite dishes, but not so healthy, so it took a lot of will power not to make it. I came up with this easy and healthy veggie dish and added tofu for protein, but chicken could easily be substituted. I started out by cubing one 16 oz package of extra firm tofu and tossing it with a little cornstarch(probably a tablespoon) to help it brown. I put it on the stove top on med to med-high heat in a lightly oiled pan. Stir every once in a while to let it brown on all sides. Once browned to your liking, set aside. While the tofu is
