Zucchini bites

I saw a recipe on cauliflower tots, which let me to a post on zucchini tots, which led me to changing the recipe and making these wonderful zucchini bites. I started out by making them closer to the original recipe, using a mini muffin tin. While they tasted delicious, they were a disaster to get out of the pan. So, I decided to make two more batches, bake them flattened like pancakes on parchment paper and they were perfect! Ingredients: 1 small zucchini, grated 1 large egg 1 thin slice of onion, finely chopped 1/4 cup grated Kerrygold Dubliner cheese(or flavorful cheese) salt-free Italian seasoning to taste salt and pepper to taste Preheat oven to 400F. Grate zucchini onto a clean dishtowel. NOT a terry cloth dishtowel, or you will end up with fuzzy zucchini bites. Wring all the excess water out of the zucchini. In a medium bowl, combine

I never know what to title these update posts. After being out-of-town last weekend, I felt like I needed to have a very productive weekend this past weekend. And productive, it was! The fridge is packed to the brim. Then I realized that I have a girls dinner on Wednesday, Brian’s birthday Thursday and Brian’s birthday dinner with friends on Saturday! Well, I guess more meals will be going into the freezer! Oh, well. I spent most of Saturday morning at the grocery store and prepping food. I made rama chicken bowls(brown rice, potato, broccoli and chicken with a peanut sauce), fajita bowls, and prepped fruits and veggies for the week. I got a steal on some chicken breasts, so I bought in bulk, individually packaged and froze most of them. I love a good deal. Mangos were $0.49/each, so I bought a few, sliced and froze in an even

Double chocolate banana donuts-One bowl

I saw a recipe for double chocolate banana bread. Bread is boring. Ok, not always boring but donuts are always fun. So I adapted the recipe a bit and made double chocolate banana donuts! Brian loves them! They are super simple to throw together, too. I made them this past weekend while I was cooking some other food for the week. They came together in about 30 minutes total! And only dirty ONE BOWL! Ingredients: 3 medium very ripe bananas 1/2 cup coconut oil 2/3 cup light brown sugar 1 large egg 1 teaspoon pure vanilla extract 1 teaspoon baking soda 1/4 teaspoon table salt 1 cup all-purpose flour 1/2 cup cocoa powder 1 cup of mini chocolate chips(I used semi-sweet) Heat oven to 350F. Weekend review

It was a very simple weekend in terms of meals. Apparently, I did not do as good of a job as I thought with planning meals last week. We have an odd amount of extra groceries that need to be used up. So, I picked up a few things to supplement what we had left and it is my challenge to get these groceries used up and make it until the weekend before needing more groceries. We went out for a quick dinner on Friday night before catching a movie. Saturday, I needed good healthy fuel after eating out Friday night and having some Junior Mints at the movie. I had  fruit and sautéed onions and mushrooms, topped with an egg. For lunch, Brian had tacos and I had a taco salad. We have lots of taco fixings left over for the week ahead. Weekend wrap up

It was kind of a weird weekend in terms of food. Usually I spend a lot of time in the kitchen on the weekends making food for the week, but that was not the case. I have been trying to clean up my eating little by little. I’ve upped my exercise over the past few weeks and with that, my hunger levels have soared. I’ve been focusing on getting in more protein and inadvertently have lowered my intake of carbs. My focus when we went grocery shopping on Saturday was protein, fruit and veggies. We left with a lot of chicken(it was on a really good sale), some beef, and lots of fruit and vegetables. So what was on the menu this weekend? Friday night was pizza night. Weekend review

It was a very simple weekend in regards to meals. Nothing crazy or time intensive. We got more snow on Saturday. I made easy banana pancakes for a protein packed breakfast before I headed out to run errands and go to the gym. They were the perfect thing to keep me full and energized. We had a simple supper of tacos. All of the delicious topping are under the meat, so you can’t see them. Sunday morning I made myself a deconstructed breakfast taco. I made cinnamon roll waffles for Brian. I revived the leftovers from a stir fry that was a flop into a peanut sauce with soba noodles that was really good.

The Friday Five(plus some): Breakfast edition

Does anyone one else have a 3 day weekend this weekend? I’m so excited to have Monday off. Thank you, MLK. One more day to have extra time to make a weekend breakfast. And because it’s an extended weekend, I am giving you an extended edition of the Friday Five. That, and I couldn’t narrow it down to five. I want to eat all of these! For my other savory breakfast lovers out there, these Simple Baked Eggs look divine. I’ve seen a lot of carrot cake themed breakfast items lately. This Morning Glory Oatmeal looked very carrot cake like and delicious. I can just image it with a swirl of warm coconut butter on top! Yum! Spiced breakfast quinoa

I have been trying to mix up my breakfast routine a little bit these days. One thing that remains constant is that I need protein for breakfast or I am starving mid morning. In the summer I like refrigerator oats, but I am not a huge fan of hot oatmeal. It always tastes good, but it doesn’t keep me full unless I eat a ton of it, but by then it has become a calorie bomb. I ran across this recipe for chai inspired spiced breakfast quinoa and adapted it.  It’s delicious, makes two servings, and keeps you full! Ingredients: 1/2 cup quinoa 1 cup unsweetened almond milk 1 cup water 1/2 teaspoon ground cinnamon 1/8 teaspoon ground nutmeg 1/8 teaspoon ground ginger 1/4 cup unsweetened coconut flakes pinch of salt 1 tablespoon honey 1/2 teaspoon vanilla extract 1 large egg any additional nuts, flax, chia or fruit as toppings

The year of the big snow

After ringing in 2014 with friends, we walked home in the snow. We woke up to more snow. It’s still snowing. I started off the new year with a hot breakfast of and egg, spinach and sriracha wrap, banana and coffee. And a decision to make. To run a 5k or head to my warm and cozy gym. For the past 4 years, I have done the New Year’s Day 5k. The weather is always horrible. Every year, I vow to not do it the next year, but I always end up signing up again. It’s a great way to start the year(theoretically). It was very cold(windchill in the single digits) and snowing sideways yesterday at the start of the race. Return to healthy eating

I heard on the news yesterday that the average American consumes 4000 calories on Thanksgiving Day. Yikes! As I posted earlier, we made some healthier swaps for our meal to help keep our meal and waistlines I check. We had mashed cauliflower instead of potatoes, turkey breast instead of a whole turkey, a side of Brussels sprouts and only a half batch of stuffing. Oh, and no dessert. Besides eating a little more than normal yesterday, I have been eating more than normal for about the past two weeks due to wedding festivities and being on my honeymoon. On a normal day, I eat more then 5 servings of fruits and vegetables. Well, Iceland doesn’t have the best climate for growing produce, so fruits and vegetables are extremely expensive there and to be honest, the quality isn’t that great. For example, a side salad at a restaurant was about $18
