Plated meal delivery: A review

This is not a sponsored post. After a lackluster experience with Hello Fresh, I was a little skeptical about another meal delivery service. I had heard good things about Plated and a friend was kind enough to gift me a free week of meals(3 meals for 2 people). So, why not. Plated was about the exact opposite experience of Hello Fresh. My husband hasn’t stopped talking about how delicious one of the meals was…we ate it 4 days ago. The produce was a much higher quality and almost all organic. The meat and seafood also seemed much higher quality. Plated offers more options of meals to choose from every week. They also offer more exotic dishes that you can add for a slight up charge. Clean and healthy

So, what happened to blogging once per week? Well, almost immediately after that post I started on a new eating plan. I was diagnosed as hypothyroid a few years ago and have been on medication since. I know it isn’t the biggest deal, but I would rather not be on medication for the rest of my life. I have been doing a lot of reading over the past year on hypothyroidism and a lot of the literature recommends changes in diet to help control thyroid levels. I have dabbled in changes, but have not fully committed to anything. After reading The Fast Metabolism diet, which reiterated much of what I had already read, I committed to 28 days of a specific eating plan that eliminated meat with nitrates and nitrites, “dirty” fish, only certain fruits and vegetables, processed foods, corn, sugar and sugar substitutes, wheat, and dairy. Whirlwind few weeks

Wow. It’s been a great few weeks. I was in baking mode when we had a birthday at work and I made a peach pie with a new crust recipe that involved vodka. The vodka evaporates out, leaving the crust nice and flaky. It’s definitely a keeper of a recipe. I also made a giant cookie cake. Over Memorial Day weekend, Brian and I traveled to Florida for his family’s annual reunion. We had a great time with his family and it was very well-organized.   While we were there we also hit up a giant flea market. I bought my brother an unopened pack of baseball cards from 1990 and we saw this guy doing karaoke. I was back in Chicago for one day, which Brian and I used to watch the new movie Fed Up. The hardest season

Hello. I usually don’t get very personal on my blog, but today, I am. I am sitting behind my computer with my pants a little tight from all the amazing food I have been eating lately. I completed the 21 Day Fix and had amazing results. I absolutely love the program and can’t stop raving about it to all of my friends. So, what happened? Well, I didn’t completely undo my progress, but I am definitely feeling bloated from the food I have been consuming. This is the hardest season for me. It’s my husband’s birthday, then my birthday, which leads directly into patio weather. And since I live in Chicago, the few warm months must be taken advantage of. Eggcellent weekend

See what I did there? I made an Easter joke. Ha. This weekend was exactly what I needed. Lots to time outside in the beautiful temperatures. It was the exact weather that you hear Chicagoans talk about all year. The weather that is reason we live here and endure the winters. It was perfect. Friday night, Brian and I met for dinner at Dawali Mediterranean Kitchen. I had been there on my last girl’s night and knew he would love it. He did. After eating a lot of hummus, we were both pretty full and didn’t even put a dent in our dinners. The good news was that we then had lunch for Saturday. The only problem was that we didn’t have any more hummus. I did have an eggplant on hand, so I roasted it and made some baba ghanoush to supplement our left overs. It is delicious and

Weekly meal planning and prep

The most common question that I am asked is how to meal plan and prep. I dedicate a fair amount of time to it. It’s not always easy or fun, but it is very beneficial. Planning meals ahead of time helps you save money by buying what you need at the grocery store, less impulsive purchases and eating out less. It also helps you to be healthier, eat fewer calories, waste less food and is a huge time saver(in the long run). I usually spend about 4 hours per weekend making meals for the week. While many of you will say that you don’t have that amount of time, you probably do. I multitask while I cook. If I’m roasting sweet potatoes in the oven, I’ll pop in a 30 minute workout video and do that while they roast. Or do laundry and other household tasks while things cook. Most

Weekend review

It was a very simple weekend in regards to meals. Nothing crazy or time intensive. We got more snow on Saturday. I made easy banana pancakes for a protein packed breakfast before I headed out to run errands and go to the gym. They were the perfect thing to keep me full and energized. We had a simple supper of tacos. All of the delicious topping are under the meat, so you can’t see them. Sunday morning I made myself a deconstructed breakfast taco. I made cinnamon roll waffles for Brian. I revived the leftovers from a stir fry that was a flop into a peanut sauce with soba noodles that was really good.

Weekend wrap-up

On Thursday night(because that was pretty much considered the start of the weekend when I was in college), I made KERF’s baked pumpkin oatmeal bites. They were only alright. I thought they were quite bland and I even added cinnamon. I substituted chopped dates because I couldn’t find my raisins. I’m eating them because they are low-calorie and healthy, but I probably won’t be making them again. Brian isn’t even interested in them. Friday night I went to the gym. My favorite zumba instructor told us in class on Tuesday that there would be an additional class on Friday. I thought it started at 6. Nope, it started at 6:30. I also realized that this class was added because of a special Halloween night they were having at the gym. There were going to be children in costumes Zumba-ing with me. No thank you. Holiday weekend

Maybe it wasn’t technically a holiday weekend, but with the 4th falling so close to the weekend, it seemed like one. Thursday we had a few people over to grill out and enjoy the back yard. There was a ton of food and festivities(maybe a little too much for some of us). We now have oodles of left overs that I have been trying to recreate into other dishes so that we aren’t eating burger after brat after burger. Saturday I woke up at 5:15am and couldn’t go back to sleep. So, I headed up and did some work in the garden and headed to water aerobics, only to learn that it started at 11am, not 10am. I didn’t want to wait around so I headed home and started creating some calzone dough. I made two different fillings, one being ground taco meat, corn and black beans with cheddar cheese

Fun and fantastic

This past weekend was awesome. The weather was great and Brian and I ended up doing some spontaneous things and really taking advantage of the city. Something I need to do more often. That’s why I live here, right? Brian took me out to dinner on Friday night because our fridge was bare! We hadn’t really gone grocery shopping in 2 weeks and we had been squeaking by on pantry staples and freezer meals all week. The upside to this was that, our fridge was bare. How is that an upside? It was the perfect opportunity to pull everything out and wipe down the shelves. A task that was long over due!
