The hardest season

Hello. I usually don’t get very personal on my blog, but today, I am. I am sitting behind my computer with my pants a little tight from all the amazing food I have been eating lately. I completed the 21 Day Fix and had amazing results. I absolutely love the program and can’t stop raving about it to all of my friends. So, what happened? Well, I didn’t completely undo my progress, but I am definitely feeling bloated from the food I have been consuming. This is the hardest season for me. It’s my husband’s birthday, then my birthday, which leads directly into patio weather. And since I live in Chicago, the few warm months must be taken advantage of. Eggcellent weekend

See what I did there? I made an Easter joke. Ha. This weekend was exactly what I needed. Lots to time outside in the beautiful temperatures. It was the exact weather that you hear Chicagoans talk about all year. The weather that is reason we live here and endure the winters. It was perfect. Friday night, Brian and I met for dinner at Dawali Mediterranean Kitchen. I had been there on my last girl’s night and knew he would love it. He did. After eating a lot of hummus, we were both pretty full and didn’t even put a dent in our dinners. The good news was that we then had lunch for Saturday. The only problem was that we didn’t have any more hummus. I did have an eggplant on hand, so I roasted it and made some baba ghanoush to supplement our left overs. It is delicious and

Celebrate good times

This week was a week of non-stop celebration. It was Brian’s birthday week. Woo hoo. We went out for dinner and drinks with some friends last night and a local and delicious restaurant called El Maya. His real birthday was on Thursday, though. I oped to make dinner for us as I knew we would be going out to eat later in the week. I made beef filet, fingerling potatoes and green beans. Then we went for a walk to enjoy the gorgeous weather and grab a birthday treat of Jeni’s ice cream. Jeni’s is one of my favorite ice cream places. They only use premium ingredients and make amazing flavor combinations. We split 3 half scoops. The flavors we chose was a chocolate mole that had an great late hit of spice, banana french toast, and goat cheese with cherries. All amazing. I spent all of my Friday night

I never know what to title these update posts. After being out-of-town last weekend, I felt like I needed to have a very productive weekend this past weekend. And productive, it was! The fridge is packed to the brim. Then I realized that I have a girls dinner on Wednesday, Brian’s birthday Thursday and Brian’s birthday dinner with friends on Saturday! Well, I guess more meals will be going into the freezer! Oh, well. I spent most of Saturday morning at the grocery store and prepping food. I made rama chicken bowls(brown rice, potato, broccoli and chicken with a peanut sauce), fajita bowls, and prepped fruits and veggies for the week. I got a steal on some chicken breasts, so I bought in bulk, individually packaged and froze most of them. I love a good deal. Mangos were $0.49/each, so I bought a few, sliced and froze in an even

Weekly meal planning and prep

The most common question that I am asked is how to meal plan and prep. I dedicate a fair amount of time to it. It’s not always easy or fun, but it is very beneficial. Planning meals ahead of time helps you save money by buying what you need at the grocery store, less impulsive purchases and eating out less. It also helps you to be healthier, eat fewer calories, waste less food and is a huge time saver(in the long run). I usually spend about 4 hours per weekend making meals for the week. While many of you will say that you don’t have that amount of time, you probably do. I multitask while I cook. If I’m roasting sweet potatoes in the oven, I’ll pop in a 30 minute workout video and do that while they roast. Or do laundry and other household tasks while things cook. Most

Going green and a healthy shamrock shake

I know it’s 2 days past the grand holiday of St. Patrick’s Day, but I thought I’d share with you the delicious green things I’ve eaten lately. On Saturday in Chicago was the dying of the river green. I spend the day running errands and having my taxes done. It must have been good luck as I’m getting a little green(refund). Then I went to Target and got an iced green tea at Starbucks. Saturday I made myself a chocolate mint protein shake and a “shamrock” shake for Brian. For Brian’s shake, I used vanilla almond milk, vanilla protein powder, ice, green food coloring and a few drops of mint extract. Lately

Wow! Where have I been? I can’t believe that it’s almost been three weeks since I last posted. I’ve been obsessed with collard green wraps. I tried one of the thai sweet potato collard green wraps from Whole Foods over a month ago and I can’t stop thinking about them. After buying a few from their pre made foods counter, with some inconsistency in the product that I got, I decided to take it to the kitchen and make them myself. I think I ate them for most meals for a week. So good. I have also been having a love affair with radishes. Plain and on everything. Can’t get enough. I made a big batch of baked apple donuts. They were delicious and were very reminiscent of apple pie. I really liked them. Just sweet enough, but not too sweet. Last week I ran a 10k in some brutal

Weekend review

It was a very simple weekend in terms of meals. Apparently, I did not do as good of a job as I thought with planning meals last week. We have an odd amount of extra groceries that need to be used up. So, I picked up a few things to supplement what we had left and it is my challenge to get these groceries used up and make it until the weekend before needing more groceries. We went out for a quick dinner on Friday night before catching a movie. Saturday, I needed good healthy fuel after eating out Friday night and having some Junior Mints at the movie. I had  fruit and sautéed onions and mushrooms, topped with an egg. For lunch, Brian had tacos and I had a taco salad. We have lots of taco fixings left over for the week ahead. Weekend wrap up

It was kind of a weird weekend in terms of food. Usually I spend a lot of time in the kitchen on the weekends making food for the week, but that was not the case. I have been trying to clean up my eating little by little. I’ve upped my exercise over the past few weeks and with that, my hunger levels have soared. I’ve been focusing on getting in more protein and inadvertently have lowered my intake of carbs. My focus when we went grocery shopping on Saturday was protein, fruit and veggies. We left with a lot of chicken(it was on a really good sale), some beef, and lots of fruit and vegetables. So what was on the menu this weekend? Friday night was pizza night. Weekend review

It was a very simple weekend in regards to meals. Nothing crazy or time intensive. We got more snow on Saturday. I made easy banana pancakes for a protein packed breakfast before I headed out to run errands and go to the gym. They were the perfect thing to keep me full and energized. We had a simple supper of tacos. All of the delicious topping are under the meat, so you can’t see them. Sunday morning I made myself a deconstructed breakfast taco. I made cinnamon roll waffles for Brian. I revived the leftovers from a stir fry that was a flop into a peanut sauce with soba noodles that was really good.
