HelloFresh: a review

This is not a sponsored post. I’ve been on the hunt for some new meal ideas. I love the idea of a meal delivery service for two. When I find a new recipe I want to make, I am often deterred by the amount of special ingredients I need to buy to make the recipe once. What if I don’t like the recipe and now have three full spice bottles I’ll never use again? Or what will I do with the rest of that random vegetable that I only needed a little of? I decided that I would try a few of the meal delivery services, and why not, they offer great deals for first time customers. The  first company I tried was HelloFresh. The thing about moderation…

Going into the new year, I declared Tuesday’s to be treat Tuesday’s. If I want dessert then I can have it on a Tuesday. It really makes me think about what I would want and choose wisely. I had dessert last Tuesday. A delicious chocolate and almond butter tart. Then I was thinking about it yesterday and there was nothing that I wanted. I always forget that when I cut down on sugar, it makes me not really want it anymore. The more I eat sugar, the more I want. So after only one treat Tuesday, I fell off the treat wagon. Not that there won’t be treats, but…they are just so much less appealing now. I love eggs. Love them. I had this little creation the other day and it was a total delight. Spinach, tomato, and feta. 2016…it’s going to be big

Wow. It’s been more than 6 months since I have last blogged. To be honest, I needed a break; 2016 will be my 12th year of blogging and that is a long time.   So much happened since I last sat down and wrote. One of the year’s highlights was my second niece was born! We did a lot of traveling. I mean a lot. So. Much. Travel. But it was amazing and I loved every minute with family and friends.   We also had new adventures in Chicago. Brian went to his first ever Bears game. I took up pottery on the wheel. Now we have more hand thrown pottery than we will never need. And did a lot of baking, cooking, and drinking some green smoothies. So, that brings us to today. Literally. Spring forward

It’s been quite some time since I last posted. I haven’t been making a ton of recipes lately, but mostly eating things that don’t require a lot of complicated ingredients as I’m always trying to eliminate processed foods from my diet. Most of the things that  I make that require a recipe are baked goods that I make/take to other people. So, let me catch you up on what I’ve been doing! For Brian’s birthday in April, I made chocolate peanut butter cupcakes with a mini pb cup baked inside. We took them to a bar where we met friends for delicious beers. My birthday weekend was spent planting my garden. We had to haul in some extra dirt and the Crafty Beaver was nice enough to let us borrow a card to push it over to my plot. Twenty fifteen

Hey everyone! I’ve been in blogging hibernation since June. Last year was a crazy but wonderful year. I did a ton of travelling and was glad to spend time with friends and family all across the country. It was very much a year of enjoyment. So, where does that leave me in 2015? Ready for a little more consistency and moderation. I tend to a be a little too strict and rigid with myself at times. Then other times, it all goes out the window. My goals for 2015 are to work out 3-4 times a week, every week. I’ve gotten much better about doing a variety of workouts and would like to continue that. And when I work out consistently I automatically eat healthier. So, if I am working out, I don’t really need to set any food based goals. I also got a great planner from my Secret Santa at

Sum sum summa time

The polar vortex is very much over in Chicago and we have moved to hot and humid. I am enjoying the warmth that summer has finally brought to us! Last weekend, I kicked off the weekend with a summer work BBQ and enjoyed some refreshments: Saturday morning, I headed to the post office to pick up my package from Thailand. I ordered a tank top from Etsy that happened to come from there and they wouldn’t deliver it to my house, so I had to pick it up. I loved the postage stamp: Then, I headed up and watered the garden. One of my co-gardeners has an abundance of radishes right now, so he shared some with me! Eeek! I love radishes and butter, salt and radish sandwiches. Thank you Grandma Domino. Massaman Curry

This recipe is absolutely delicious. I made it for the first time a few years ago for Brian as a surprise. I thought I would blog it again with some updates, because it is that good, comes together quickly and is extremely satisfying. Ingredients: 2 tablespoons olive oil 3 tablespoons red curry paste 1 (3/4 inch thick) slice ginger, minced 1  container extra firm tofu, cubed(can also use 1 pound chicken breast cubed) 3 tablespoons brown sugar 3 tablespoons fish sauce 3 tablespoons Worcestershire sauce 1/3 cup peanut butter(not natural) 1 (13.5 ounce) can lite coconut milk 3 tablespoons fresh lime juice Peanuts, chopped lime wedges, for serving pinch of red pepper flakes, if you want it a little hotter cilantro for topping, optional steamed broccoli, optional cooked rice, for serving This recipe is traditionally made with chicken and potatoes, which is the way I usually make it. A week in review

This is going to be a little more than a weekend wrap up. Last Wednesday I had the pleasure of having a wonderful meal cooked for me by my friend’s Brock and John. Brock made the cocktails and collaborated with John on flavor combinations while John did most of the cooking. We started with a mixed greens salad, goat cheese and beets prepared two ways. We moved on to scallops, tomatoes and linguine in a moan-worthy white wine sauce. We ended with a pot de creme with mint, fleur de sel and a raspberry reduction pipped to the bottom. Not only was the food out of this world, we had hours of great conversation and laughter. Nearly finished bourbon cocktail: Pot de creme: Thursday night, Brian wanted tomato soup. How is it going?

It’s day 3 of the New Year. How is everyone doing on their resolutions? I’m doing ok. I have had a complete lack of motivation to do much cooking lately. It’s horrible. I make my meal plan, but never want to execute it. Instead, I just throw together something simple and eat that. Not the worst thing, but I need to have a big cooking day. Last night my plan was to make a batch of macro bowls. This is what I ate instead: Don’t get me wrong, it was an incredibly delicious veggie wrap, but the point of making the bowls was that then I would have leftovers to pack for my lunch today. Instead, I scrambled around the kitchen this morning to make something work. I saw this article by Mark Bittman(love him) on sustainable resolutions. I really liked it. We are human and will have hiccups here

Turkey wrap up

I am going to write a quick Thanksgiving wrap up , before I start what will probably be an extended series of post on Icelandic adventures and food. We arrived home from our honeymoon early Wednesday morning to a very messy house and an empty fridge. With plans to have a simple Thanksgiving dinner with a friend at our house, getting to the grocery store was top priority. Then came doing a deep cleaning of the house. Fortunately, all got done. My friend Katie and I did a Turkey Trot 5k at 7:30am on Thanksgiving morning. It was a cold run. They handed out mini apple pies at the finish line. Even though Brian didn’t run the race with us, he thought that apple pie on Thanksgiving was an outrage. I think his exact words were, “Apple pie?
