Chicken pineapple curry

I had found a recipe on Pinterest, but made so many changes to it by the time it was done, that it really looked nothing like the original by the time I was done. Ingredients: 1-15oz can of coconut milk(you can use light if you want) 1 1/2 T red curry paste 1/2 T curry powder 1/2 tsp ground ginger 1/2 tsp ground garlic powder 1 cup of pineapple chunks(well-drained, reserve juice to the side) 1 large carrot, cut into match sticks 1 1/2 cups broccoli but into bite-sized florets 2 chicken breasts diced cilantro for garnish, optional lime, optional rice or cauliflower rice to serve over Directions: Prepare the rice or cauli rice as directed, so it will be done when your curry is finished. Plated meal delivery: A review

This is not a sponsored post. After a lackluster experience with Hello Fresh, I was a little skeptical about another meal delivery service. I had heard good things about Plated and a friend was kind enough to gift me a free week of meals(3 meals for 2 people). So, why not. Plated was about the exact opposite experience of Hello Fresh. My husband hasn’t stopped talking about how delicious one of the meals was…we ate it 4 days ago. The produce was a much higher quality and almost all organic. The meat and seafood also seemed much higher quality. Plated offers more options of meals to choose from every week. They also offer more exotic dishes that you can add for a slight up charge. HelloFresh: a review

This is not a sponsored post. I’ve been on the hunt for some new meal ideas. I love the idea of a meal delivery service for two. When I find a new recipe I want to make, I am often deterred by the amount of special ingredients I need to buy to make the recipe once. What if I don’t like the recipe and now have three full spice bottles I’ll never use again? Or what will I do with the rest of that random vegetable that I only needed a little of? I decided that I would try a few of the meal delivery services, and why not, they offer great deals for first time customers. The  first company I tried was HelloFresh. Old favorites, new favorites

I have really enjoyed being back in the kitchen more since the start of the new year. When we travel a lot, we do as I think most people do, shop for convenience and speed. I hadn’t been making nearly as many things from scratch. I’ve really enjoyed having homemade nut milks among other things on hand. One of my favorite things to make with homemade milk is chia pudding. It makes a delicious and filling breakfast. Another thing I’ve done to help myself have more time in the kitchen is on occasion I get some of my groceries delivered. I still buy almost all of my staples at Aldi, but this really helps me to cut down on running to 3 different grocery stores, which can take up most of 1 weekend day, when you don’t have a car. The thing about moderation…

Going into the new year, I declared Tuesday’s to be treat Tuesday’s. If I want dessert then I can have it on a Tuesday. It really makes me think about what I would want and choose wisely. I had dessert last Tuesday. A delicious chocolate and almond butter tart. Then I was thinking about it yesterday and there was nothing that I wanted. I always forget that when I cut down on sugar, it makes me not really want it anymore. The more I eat sugar, the more I want. So after only one treat Tuesday, I fell off the treat wagon. Not that there won’t be treats, but…they are just so much less appealing now. I love eggs. Love them. I had this little creation the other day and it was a total delight. Spinach, tomato, and feta. Goals

I told you I’d be back with my goals. I’ve done month long detoxes, 3 day diets, and all sorts of other plans. Some stuck for longer than others, but none of them lasted. So what is my plan for this year? Moderation. I’m following a healthy eating plan that allows treats. I even stayed within my parameters last night when we went out to eat and had cocktails. It was great. I was in control. So what am I doing today? Dialing it back a little. I’m a huge Iowa Hawkeye fan and today is the Rose Bowl. I could be at a bar with an all I can drink special and a buffet of unhealthy foods. I’m not. I’m watching the game from home, confit ably in my pajamas andtreating myself to a little good charcuterie, lots of water, fruit and vegetables. And I’m happy with that…I’m in
