So, what happened to blogging once per week?
Well, almost immediately after that post I started on a new eating plan. I was diagnosed as hypothyroid a few years ago and have been on medication since. I know it isn’t the biggest deal, but I would rather not be on medication for the rest of my life. I have been doing a lot of reading over the past year on hypothyroidism and a lot of the literature recommends changes in diet to help control thyroid levels. I have dabbled in changes, but have not fully committed to anything. After reading The Fast Metabolism diet, which reiterated much of what I had already read, I committed to 28 days of a specific eating plan that eliminated meat with nitrates and nitrites, “dirty” fish, only certain fruits and vegetables, processed foods, corn, sugar and sugar substitutes, wheat, and dairy. It felt very similar to the detox that I did a few years ago when I quit diet soda for good.
Since the foods that I have been allowed to eat have been fairly restricted, it has been hard to search for recipes of things I would like to make. That coupled with travelling for a week, left me a little out of touch with Spatoola. I only have a few days left on this eating plan, so I can add a few more things back in, however, I would like to make some of the changes permanent.
That being said, I would love to give you a little update of some of the things that have happened in my absence.
I made a few batches of homemade almond butter and hummus…and ate a lot of both!
One of the things I could have for breakfast was steel cut oats with fruit and a healthy fat(depending on the day). I really enjoyed making new combinations of oats and fruit.

While I was with my family, I had fun making food for them, even if I couldn’t eat all of it. I was able to eat fresh caught grouper with lemons:
I also made butternut squash with almonds and bleu cheese:
Then were the cupcakes. Some had Oreos baked into them:
There was at least one person that like the cupcakes:
And the view of my parent’s place was gorgeous. We could watch dolphins all day!
Upon returning from vacation, I made two of my favorite meals from January.
Avocado and shrimp salad:
And steak, green beans, and mashed cauliflower with bacon. The bacon and small amount of bacon fat gave the cauliflower loads of flavor.
