I mentioned in an earlier post that I made some quick and easy Mexican pizzas when I was exhausted the other night. I thought I’d give you the details, so if you ever need a quick dinner you make them, instead of picking up the phone and ordering out. You can thank me later for saving you a delivery fee and lots of calories.
- corn tortillas
- black beans
- sweet potato
- hot sauce
All of these ingredient are options. Add and omit as necessary and you can easily make these vegetarian or vegan. They are already gluten free and do not have any added sugar. Pretty healthy for being so delicious, huh?
Preheat oven to 400F with a pizza stone in it, if you have one.
Use one corn tortilla per “pizza”. Open a can of black beans and rinse. Smash some black beans on the tortilla. This will act as your adhesive. I had a left over baked sweet potato in the fridge, so I diced up a little of that and put it on top. Then I diced up some left over grilled chicken and threw that on. I found some corn in the freezer and threw a few kernels on top of the pizza. Then, I put a lot of hot sauce on mine and less on Brian’s pizzas.
I topped each tortilla with a slice of gouda(I didn’t have any other cheese on hand). I threw them on the pizza stone(or you could use a baking sheet) for about 10 minutes until the cheese was melted.
Slice into wedges and devour your protein and fiber loaded dinner! No guilt!
