Increased activity

In my last post, I reported that I was struggling with getting back to consistently eating healthy and exercising. I’ve been doing great since that post. However, that means not a lot of exciting recipes using a lot of ingredients, but we have been eating a lot of lean protein, vegetables and a few complex carbs. I feel a million times better and that sluggish feeling is gone. I’ve also increased my exercise and am on track to complete the 21 Day Fix in 14 Days. Woo hoo. I even bit the bullet and rode my bike to and from work one day.

Friday night, we had ¬†hodge podge for dinner. It was part cleaning out what we had and part not much time to make dinner. I had what I like to call a snack plate. It’s really one of my favorite things. Lots of different stuff on my plate. Simple and lots of flavor. I made a pesto flat bread with fresh mozzarella and tomatoes. Unfortunately, when baking some pesto and cheese slid off the edge of the flat breads and made quite the mess in the bottom of my oven. Then I had lots of veggies, some baba and a little trail mix. Delicious.

Saturday morning. I got up early as I usually do to work out. I replenished with a banana with cinnamon and two eggs loaded with mushroom, zucchini and tomato. Topped with sriracha. Black coffee with a teaspoon of coconut oil on the side. Must have coffee.

Then Brian and I went for a bike ride to pick out a tomato plant for my garden. I knew I wanted a bush tomato plant. The people working at the store had no knowledge and told me they didn’t carry them. I found two. Unfortunately, they were both close to full grown already. The thing was a beast. I bought one and it rode home in my bike basket. Oh, the sight!

Brian decided that we needed to get a house plant. I have a black thumb when it comes to house plants, so we decided on a succulent. Brian named it Specter.
