How is it going?

It’s day 3 of the New Year. How is everyone doing on their resolutions?

I’m doing ok. I have had a complete lack of motivation to do much cooking lately. It’s horrible. I make my meal plan, but never want to execute it. Instead, I just throw together something simple and eat that. Not the worst thing, but I need to have a big cooking day. Last night my plan was to make a batch of macro bowls. This is what I ate instead:


Don’t get me wrong, it was an incredibly delicious veggie wrap, but the point of making the bowls was that then I would have leftovers to pack for my lunch today. Instead, I scrambled around the kitchen this morning to make something work.

I saw this article by Mark Bittman(love him) on sustainable resolutions. I really liked it. We are human and will have hiccups here and there. It’s really about being flexible, moderation and consistency. I definitely recommend reading it.


It is no secret that I am a huge fan of Whole Foods’ salad bar. I would happily go there for dinner after every time I go to the gym, but it’s a little pricey. So, when I really like something on the salad bar, I usually try to figure out their recipe and make it at home. I recently stumbled across this recipe for a kale and Brussels sprout salad that looks alarmingly similar to one that I love. The only difference that I can tell is that WF puts dried cranberries in their’s as well.


Something I have been wanting to try is to make wraps in collard greens leaves instead of wheat or rice products. This recipe looks great and might actually make me try it. Thanks for the inspiration Love and Lemons.


Along with my lack of desire to cook lately, I haven’t done any baking. I had a stock pile of scones and baked donuts in the freezer to send with Brian for breakfast. He has eaten through them for breakfasts over the past few weeks and it looks like it’s time for me to replenish. I have a few pears to use up and might make these with almonds instead of hazelnuts.


Chicago is predicted to have a high temperature of -8(yes, that says NEGATIVE 8) on Monday with high winds. Brrrr. I might need to stay home, hide under blankets and drink a few of these wintry Manhattans to stay warm.
