I present to you, Banana Chocolate Chip Donuts. Clocking in at slightly 200 hundred calories a piece(with my adaptations), they afford you the luxury of eating a donut without breaking the calorie bank. Or spending the rest of the day at the gym. They are dense, moist, and most tasty when warm out of the oven. Mmm mmm mmm. I do have a small confession. I, like most of you have a little addiction with Pinterest. I pin far more things than I make or do and am skeptical about unrealistic claims under the pictures. I think people just write those things to get more people to pin it. There is no way that one chicken recipe is so good that you have eaten it every day for a year. No. way. I’ve had several successes from the wide world of Pinterest, but have also had some failures. Failure #1 Put Sharpie on a plain coffee mug and bake it at 350F for 20 minutes and it become permanent. IT DOES NOT! It scrubs right off. Has anyone done this and it actually worked? Failure #2 Soak a not soft t-shirt in a ratio of 1cup salt:1 cup water for 3 days. Wash and it becomes soft. I’ve pickled things before. Pickled pickles. Also called pickled cucumbers. Pickled carrots. Pickled vegetables for bahn mi. They’ve all been delicious. Sunday, there was last-minute decision to change menu plans from pork tinga to some amazing honey lime fish tacos. Last time I made the tacos, I didn’t have the energy to run to the store, so we just made do with what we had and topped them with lettuce and avocado. Well, this time, I did them up right. A little crunchy and tangy goes great with fish. So we had the option of more toppings this time. Red cabbage, cilantro, jalapeno, avocado, limes, and pickled onions. The recipes of pickled onions I have made before took time. So a quick google seach returned a Bon Appetit result that I knew wouldn’t steer me wrong. Yep. It’s as easy at it sounds. And tastes a little bit like apple pie a la mode. 1 cup of plain or vanilla Greek yogurt 1 apple diced cinnamon If you use plain yogurt, you may want to add a drop or two of vanilla, but if you don’t, this is still wonderful. Mix everything together and eat! I put in tons of cinnamon. No really, like a tablespoon just for the health benefits of cinnamon, but would suggest that people start below that amount. This would also be a great post workout snack.
After getting into roasting beets from the farmer’s market a few summers ago, I decided that I liked beets. Since then, I have had a hot and cold relationship with beets. During one of those hot streaks, I bought 2 cans of them from the grocery store. I have no idea what I was thinking. So, they’ve been in the pantry for months now and I decided that they needed to get used up. Fortunately, Neverhomemaker posted a beet burger recipe. I substituted fresh beets for canned beets and black beans for white beans and the burgers turned out delicious! Dare I say that it might be my new favorite veggie burger recipe? Well, it might. At the last minute last night I met a few of my old co-workers out for drinks. As you know, I rarely go out anymore, especially on Friday nights, but was really glad I did. We had a blast and tons of laughs. Being up later than usually has made me a little tired today, coupled with some congestion, I’ve felt like an all out bum. I was mildly productive in the kitchen, but I just can’t seem to tackle that ever growing pile of laundry. I made a half dozen hard boiled eggs to have as snacks throughout the week. A batch of slightly disappointing healthy chocolate and peanut butter granola. Oh, and I severely burnt the other tray of it. Meh granola + burnt granola= granola fail. I have professed my love for Mexican food several times over. One thing I rarely order or make is enchiladas. Mostly because they aren’t that healthy. And they have such little nutritional value. So I decided to cook them up at home to try to make them a little healthier. There is the never-ending battle between the flour and corn tortilla in our house. Brian likes the flour, I like the corn. I am still trying to limit my gluten intake and corn have way fewer calories than flour. So this is a tale of two different plates of enchiladas. So start by making the enchilada filling. Uh. I was cranky and feeling like crap this afternoon after indulging at work today. I came right home and did a killer workout then made us a healthy dinner of oven baked mahi mahi and green beans with baby portabellas. Heart healthy for Valentine’s Day! Eating crap and sweet treats at work today was a reminder that I need to reset myself and refocus. At the beginning of the year I said that I was going to give up sugar. I initially did really good. Then I was bad, then I was better and I’m back to being bad. I always regret it and feel crappy afterwards. Blah! When will I ever learn? So, I decided today that I’m not having any sweets or treats until Easter. None. Hopefully by that time I will have lost the taste for sweets and will continue on without a problem. It’s time
It wouldn’t be Valentine’s Day without a post. Every month at work we have Payday Potluck. When we get paid(once a month), we all bring in food. It’s always a feast. This month we moved it up a few days to celebrate a birthday and Valentine’s Day as well. I wish I would have taken a picture of the spread. It was deluxe! We had fried chicken, french fries, fried okra, tamales, pizza, Indian rice, salad and Iowa Girl Eat’s brownie truffles. I may have gone a little nuts. So I am focused on drinking a lot of water and getting in a really good workout tonight. After my workout, I am going to use one of my Valentine’s Day presents from Brian. We usually don’t do much but he went overboard this year and completely surprised me. He got me a really amazing at home massager which is a
You may have noticed a lack of posting lately. That is a direct reflection on my lack of cooking lately. Brian was sick all last week and had no appetite. None. So, that left me with little motivation to cook. And we had a fridge full of food. So I cooked a little here and there. Mostly just enough for me to eat and have leftovers to take to work the next day. I had just bought a nice big piece of fresh Sockeye salmon, so that was 4 meals right there with a side of veggies. I had some leftover turkey burgers to work though and a batch of avocado kale salad. I did make a little fresh hummus to keep at home. It’s so tasty. I also had a head of cauliflower that needed used up. I roasted it with curry powder and paprika for some nice flavor.
