Easy meals

This past weekend was great. Except for my discovery of these: I hate candy corn and think they are some of the worst candy ever made. Why variations of them would be made is beyond me. Especially by M&M and Oreo. Yuck. I made some fast or easy meals that I’d like to share. Trader Joes makes some great frozen naan that I love to turn into individual pizzas. The garlic naan adds some great flavor. On Sunday my parents did the Bucktown 5k with Brian and I. The weather was perfect. After the race I made a roast in the crock pot. A 2 pound roast well salt and peppered with 8oz of Guinness, a pound of thickly sliced mushrooms, a thickly sliced onion, and a few small red potatoes on low for 8 hours. So moist and tender. This past weekend was awesome. Brian and I spent our entire Friday evening rocking out to Bruce Springsteen at Wrigley Field at a mutually decided, best concert of our lives. Saturday morning I woke up very stuffy, so I treated myself to my favorite sinus clearer: wasabi peas. The rest of the morning was full of errands and Saturday afternoon was full of disappointing football. I made some standard ground beef tacos for us for lunch. At the past minute, I decided to throw in a can of black beans. What a great idea. It almost doubled the recipe(yay for lots of left overs) and made them healthier while adding great flavor. Sunday morning I made us twist on huevos rancheros for breakfast using some of the left over taco meat with beans. Labor Day

I had an incredibly busy but super fun Labor Day weekend. My parents came in town for the Iowa game at Soldier Field. And we tailgated all day. They left early Sunday morning and I drove to Green Bay to surprise a friend for her birthday. I got to sit by the bay and build fires and have a few cocktails. We had a masseuse come to the cottage and make a make-shift outdoor massage area. The ultimate in relaxing. For breakfast on Monday morning we had eggs and enchiladas mole. The most smooth and best mole I’ve ever tasted. Can I have a 3 day weekend every weekend?
